When you hear Chardonnay, we’d forgive you for not immediately thinking of the Black Sea and Southern Ukraine, but the legendary white grape thrives on the shores of Odessa. It’s got great balance, with notes of citrus and apple, and some vanilla coming in hot from the French oak it's been aged in.

Winemaking in Shabo - the town to which the winery owes its name - has been culturally embedded since 1822 when swiss settlers were invited to cultivate the town vineyards. These days, the winery is operated by a passionate and talented family of internationally recognised Georgian winemakers, making use of modern facilities and the Black Sea climate.
