Grape: 100% Assyrtiko
This white is as crisp as Sancerre, but rather than sitting in a dusty cellar steeped in tradition, it hangs out on a sunny island, and is grown in volcanic soil. The vines benefit from plenty of sunshine, without searingly hot temperatures: the vineyard sits at 440m above sea level. This means the grapes don't ripen too quickly, allowing the flavour to slowly emerge over the course of the growing season. The result is a refined striking white wine that deserves our attention. It's crisp, clean and moreish.
